Raw Sugar graded ICUMSA 45 is the Highest Value

The International Commission for Uniform Methods of Sugar Analysis, more commonly known as ICUMSA, is an international regulatory body that sets the standards for sugar analysis testing.

The ICUMSA rating can be used world wide to quickly and accurately describe the properties of sugar. Sugar is given a numerical rating that is established by testing the sugar with various wavelengths of light.

Raw sugar is a very dark color and will absorb a lot of light; where as highly refined sugar is sparkling white and will absorb very little light. The color of the sugar is directly related to the amount of refining that has been done. Therefore raw sugar is given a high numeric value that can be 1000 or higher. The worlds leading consumer sugar has been highly refined and is given the ICUMSA rating of 45.
